This Focaccia was used for both sandwiches and pizza crust at Espresso Roma when I cooked there

bah! No wonder this wasn't working.. I just scribbled the recipe out on a paper and went to the kitchen with it, and both times the bread just wasn't rising.. Even though my yeast is good.. Now I think I see why. The recipe above says "1 c flour" but then the instructions say 2-3 cups of flour.. I was only using one.

Sorry! The first, 1 c, of flour goes in the sponge, and then the missing 2-3 c of flour goes in at the end. I've edited the recipe. De-lurk and I'll make you a loaf in compensation.
