Pad Thai Sauce

Ingredients:
1 c tamarind juice
1.25 c palm sugar (if using regular sugar, adjust amount downwards)
0.5 c fish sauce
1 c water
1 t salt
Method:
simmer all ingredients over low heat until thick and syrupy and reduced to 1 pint
Yield:
1 pint (8 servings)
