Always make one serving of noodles at a time, cleaning out wok between servings

You can cook all the cook in advance stuff together and divide into multiple bowls

Total sodium here including sauce, bacon, and dried shrimp is around 2000mg (RDA is 1500mg)


Ingredients:

1 T chopped bacon


0.5 eggs, beaten


protein, your call (shrimp, chicken, pork, beef, soy, whatever)


1 T peanut oil


2 cloves of garlic, minced


1 t dried shrimp, pulverized (can use coffee grinder)


2 oz rice noodles, soaked for 40 minutes in hot (not boiling) water


0.5 c bean sprouts


red pepper flakes


2 T chopped scallions


1 lime wedge


1 T ground peanuts


Method:

cook bacon bits until crispy, put in bowl


pour out extra bacon grease and scramble eggs, add to bowl


cook protein however it should be cooked and add to bowl


heat oil in wok until wisps of smoke appear


add garlic and fry until garlic starts to brown


add dried shrimp and then drained noodles to wok and stir fry briefly


add pad thai sauce and stir fry until the noodles soften


add pre-cooked items from bowl and bean sprouts and toss to let everything warm through


return everything back to the bowl and top with scallions, red pepper, peanuts, and lime wedges


Yield:

1 bowl
