Ingredients:
4 c water
8 in2 kombu
1 c / 20 g katsuo
Method:
bring water and kombu to a boil
turn off the heat, remove kombu from the pot
add katsuo to the pot, steep for 2 minutes, and strain
Yield:
4 cups
