Black Bean Sauce

Ingredients:

2 T peanut oil


2 T fermented black beans, rinsed


1 T minced garlic


0.5 c stock


1 T soy sauce


2 T rice wine


1 t sugar


1.5 t corn starch


Method:

set aside oil, beans, and garlic. mix everything else in a bowl, whisking until corn starch is dissolved.


heat oil in wok


fry black beans and garlic for a few seconds, until garlic is just starting to brown


add remaining ingredients and simmer until thick


Yield:

1 cup
