Garam Masala

Garam = Hot. Masala = Spice.
Mostly used as a flavoring after cooking
Ingredients:
1 t. cumin seeds
0.5 t. pepper corns
0.25 t. cardamom seeds
0.25 t. coriander seed
0.5 in. cinnamon stick
0.5 star anise (3 sections)
2 cloves
1 bay leaf (malabar leaf would be more correct but it's not in my pantry)
0.25 t. ground nutmeg
Method:
toast everything except nutmeg and bay leaf
when spices start to become fragrant, add bay leaf
toast until spices start to brown and are very fragrant
grind everything to a fine powder
